As its name suggests, the Siberian sturgeon still occurs in its natural environment in the wide rivers of Siberia. Its caviar is anthracite gray to black in color and the grain is 2.5 mm to 3.0 mm in size. With its fine texture, the taste of the caviar is slightly buttery, with a hint of dry fruits and very pleasant on the palate. It tastes very similar to Beluga caviar.
