VINIFICATION


For the ‘Ehrenhausen’ Wines we looked at the French and mimicted their approach, especially from the winemakers from Burgundy. 

This category is intended to reflect the terroir - i.e. the soils and the microclimate of the location where the winery is located. 

For these wines, I select vineyards that are between 15 and 30 years old, meaning they are already deeper rooted and have slower growth. 

As a result, they tend to be less fruity, but rather show more minerality as well as greater depth and a longer structure on the palate. 

The wines are fermented spontaneously and without any additives, stored on the lees for one and a half years and then bottled unfiltered. These wines are said to be a very good precursor to single-vineyard wines.

 


DESCRIPTION

The grapes for this Morillon (Chardonnay) are from four combined plots of the village Ehrenhausen. This is also where the winery is located.

They reflect the characteristics and terroir of the place and are spontaneously fermented and stored on the full lees for 1.5 years before being bottled unfiltered.
