VINIFICATION
Two harvest passes with manual selection of the ripest grapes, between the end of September until the beginning of October, separate controlled fermentation in stainless steel tanks, 8 months storage on the fine lees - partly in 500 l tonneaux, then the assemblage. Filtration and filling took place in April 2023.
DESCRIPTION
Very fruity nose, nuances of apricot and peach, nice note of hay grass and herbs, fresh
minerality with good balanced sugar-acidity and and long lasting finish.
RECOMMENDED PAIRINGS
Interesting all-rounder, delightful as an aperitif or on its own, lovely as an accompaniment to light fish dishes, vegetable dishes and spring asparagus. Great with goat cheese.
